Dairy Free German Chocolate Cake

German chocolate cake has always been one of my favorite desserts, so I wanted to make a version that skips the dairy without losing anything.

This dairy free German chocolate cake has soft chocolate layers, a rich coconut pecan filling, and a smooth chocolate frosting.

Moist dairy free German chocolate cake slice

The best part is that no one will guess it’s dairy free. It tastes just as good as the classic version.

I use coconut milk and dairy free butter to get that creamy filling everyone loves. It works perfectly and keeps things simple.

If you have been missing this cake because of dairy, this recipe is for you. Let me show you how to make it.

Why This Recipe Is a Keeper

Deep Chocolate Flavor – Cocoa and hot coffee create a rich chocolate taste without making the cake taste like coffee.

Soft and Moist – Oil, soy milk, and coffee keep all three chocolate layers tender and moist.

Sweet dairy free German chocolate cake

Wonderful Texture – Toasted pecans and shredded coconut give the creamy filling a satisfying mix of nutty flavor and chewy texture.

Caramel-Like Filling – Coconut milk, brown sugar, egg yolks, and dairy-free butter create a smooth, rich filling.

Here’s What You’ll Need

For the Chocolate Cake

  • 2 cups All-Purpose Flour
  • 1 3/4 cups Granulated Sugar
  • 3/4 cup Unsweetened Cocoa Powder
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Fine Salt
  • 2 Large Eggs
  • 1 cup Unsweetened Soy Milk
  • 1/2 cup Neutral Oil
  • 2 tsp Pure Vanilla Extract
  • 1 cup Hot Brewed Coffee

For the Coconut Pecan Filling

  • 1 cup Full-Fat Coconut Milk
  • 3/4 cup Light Brown Sugar
  • 4 Large Egg Yolks
  • 1/2 cup Dairy Free Butter
  • 1 tsp Pure Vanilla Extract
  • 1 1/3 cups Sweetened Shredded Coconut
  • 1 cup Toasted Chopped Pecans
  • 1/4 tsp Fine Salt

For the Chocolate Frosting

  • 3/4 cup Dairy Free Butter, Softened
  • 2 1/2 cups Powdered Sugar
  • 1/2 cup Unsweetened Cocoa Powder
  • 1/4 cup Unsweetened Soy Milk
  • 1 tsp Pure Vanilla Extract

How to Make It

Step 1

Heat the oven to 350°F. Line three 8-inch round cake pans with parchment paper and lightly coat the sides with neutral oil.

Step 2

Whisk the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Add the eggs, soy milk, neutral oil, and vanilla extract, then whisk in the hot coffee until the batter is smooth.

Step 3

Divide the batter among the pans and bake for 22 to 26 minutes, until a toothpick comes out with a few moist crumbs. Cool for 10 minutes in the pans, then transfer the layers to wire racks.

Step 4

Whisk the coconut milk, brown sugar, egg yolks, and dairy free butter in a saucepan. Cook over medium-low heat for 9 to 12 minutes, stirring constantly, until thick enough to coat a spoon.

Step 5

Remove the filling from the heat and stir in the vanilla extract, shredded coconut, toasted pecans, and salt. Transfer it to a shallow bowl and cool completely.

Step 6

Beat the dairy free butter, powdered sugar, cocoa powder, soy milk, and vanilla extract until fluffy. Spread this chocolate frosting around the outer edge of each cooled layer to create a border.

Step 7

Fill inside each frosting border with coconut pecan filling and stack the layers. Frost the sides with chocolate frosting, spoon the remaining filling over the top, and let the cake set for 30 minutes.

Recipe Tips

Measure The Cake Batter Evenly

Use a kitchen scale or measuring cup to divide the batter as evenly as possible between the three pans. This helps all three layers finish baking at the same time and gives you even layers for stacking.

If the pans are filled unevenly, one cake may dry out while another still needs more time in the oven.

Use Hot Coffee In The Batter

Add the coffee while it is still hot, then whisk the batter until smooth. The hot liquid helps dissolve the cocoa powder and brings out a deeper chocolate flavor.

Delicious dairy free German chocolate cake

The batter will be quite thin, which is normal for this cake. Pour it carefully into the prepared pans so it does not splash over the sides.

Check The Cake For Moist Crumbs

Start checking the layers at 22 minutes by inserting a toothpick into the center. Take them out when the toothpick has a few moist crumbs attached, but no wet batter.

If the toothpick comes out completely clean, the layers may already be slightly overbaked and less moist than intended.

Popular Questions

Can I replace the coffee in the chocolate cake?

Yes, replace the hot brewed coffee with an equal amount of hot water. Coffee deepens the chocolate flavor, but hot water will still give you a moist, rich cake.
