Millionaire shortbread has always been one of my favorite sweet treats to make at home.
Most traditional versions rely heavily on regular butter and standard condensed milk, which does not work well if your stomach cannot handle dairy.

That is why I created this dairy free protein millionaire shortbread, so anyone avoiding dairy can still enjoy every single bite without missing out.
The base is tender and crumbly, the caramel layer is sweet and gooey, and the dark chocolate on top gives it a clean snap.
Adding a scoop of protein powder to the crust also helps make each square a bit more filling than an ordinary dessert.
Why This Recipe Is a Keeper
Classic Taste Without Dairy – You get the authentic rich flavor of traditional bakery millionaire bars completely free from any dairy ingredients.
Sneaky Protein Boost – Vanilla protein powder blends smoothly into the crust to give you lasting energy with every sweet bite.

Incredible Three-Layer Texture – Every square delivers a crumbly base, ultra-gooey caramel center, and crisp chocolate shell all in one bite.
Luscious Coconut Caramel – Condensed coconut milk and almond butter simmer together to create the dreamiest dairy-free caramel you will ever taste.
Here’s What You’ll Need
For the Shortbread
- 2 cups Almond Flour
- 1/2 cup Dairy Free Vanilla Protein Powder
- 1/4 tsp Salt
- 1/3 cup Dairy Free Butter, Melted
- 1/4 cup Maple Syrup
For the Caramel
- 1 can (11.25 oz) Sweetened Condensed Coconut Milk
- 1/4 cup Dairy Free Butter
- 1/4 cup Packed Light Brown Sugar
- 2 tbsp Maple Syrup
- 1/4 cup Smooth Almond Butter
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
For the Chocolate Topping
- 6 oz Dairy Free Dark Chocolate, Chopped
- 1 tsp Coconut Oil
- 1 pinch Flaky Sea Salt
How to Make It
Step 1
Preheat the oven to 350°F and line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides for easy lifting.
Step 2
In a bowl, whisk the almond flour, protein powder and salt, then stir in the melted butter and maple syrup until a soft dough forms. Press it firmly and evenly into the bottom of the pan.
Step 3
Bake for 14 to 16 minutes, until golden around the edges. Cool completely in the pan, as the shortbread firms up while it cools.
Step 4
In a medium saucepan, combine the condensed coconut milk, butter, brown sugar and maple syrup over medium-low heat. Cook, stirring constantly with a heatproof spatula, for 10 to 12 minutes, until the caramel thickens, turns deep golden and pulls away from the sides of the pan.
Step 5
Remove from the heat and stir in the almond butter, vanilla and salt until glossy. Pour over the cooled shortbread, spread evenly and refrigerate for 1 hour, until firm.
Step 6
Melt the chocolate with the coconut oil in 30-second intervals, stirring until smooth. Pour it over the caramel, tilt the pan to spread it into a thin, even layer and sprinkle with flaky salt.
Step 7
Chill for 30 minutes, until the chocolate is set. Let it sit at room temperature for 10 minutes before cutting into 16 squares, which keeps the chocolate from cracking.

Recipe Tips
Pick the Right Protein Powder
I recommend using a pea-and-rice protein powder blend rather than pure pea protein. Pure pea protein can absorb too much moisture and make your shortbread base feel dry and chalky.
You will get the best results if you pick a vanilla powder that is finely ground so it blends smoothly into the almond flour.
Pack the Shortbread Base Firmly
From my experience, using the flat bottom of a drinking glass or a metal measuring cup gives you the neatest base. Press the dough down firmly into every corner of the pan.

Almond flour has no gluten to bind it naturally, so pressing it down with firm pressure keeps your base from crumbling when you cut it later.
Be sure to let the crust cool completely before adding the hot caramel layer so the bottom does not turn soggy.
Watch the Heat on the Caramel
Sweetened condensed coconut milk has natural sugars that can scorch very quickly on the bottom of your pan. Keep your stove burner on medium-low heat throughout the entire cooking time.
I’ve found that using a flat silicone spatula works best because you can constantly scrape the bottom and the corners of the pan.
Your caramel is fully cooked when your spatula leaves a clear trail across the bottom of the pan that holds for two full seconds.

Popular Questions
What type of dairy-free protein powder works best in the base?
A plant-based blend made from pea and rice protein works best because it gives the crust a smooth, cookie-like texture.
Try to avoid pure hemp protein, as it can make the shortbread gritty and add an earthy flavor.
