Dairy Free Lobster Bisque

Lobster bisque used to be one of my favorite soups to order whenever I went out for seafood.

Traditional versions are always loaded with heavy cream, which can make it hard to enjoy if your stomach cannot handle milk products.

Homemade dairy free lobster bisque

That is why I created this dairy free lobster bisque so anyone can enjoy a bowl at home.

Instead of heavy cream, I use a simple cashew cream that makes the broth thick and velvety without altering the seafood flavor.

You still get all the rich taste of tender lobster and warm herbs in every single spoonful.

Why This Recipe Is a Keeper

Incredible Silky Texture – Blended cashew cream makes this soup taste just as rich and velvety as traditional heavy cream.

Maximum Lobster Flavor – Simmering the shells in the broth extracts deep, restaurant-quality seafood flavor into every single drop.

Comforting dairy free lobster bisque

Restaurant Luxury at Home – You can enjoy a high-end gourmet dining experience from your own kitchen without any dairy.

Perfect Balance of Seasonings – A touch of sherry, smoked paprika, and fresh lemon brings bright, mouthwatering complexity to the dish.

Here’s What You’ll Need

For the Cashew Cream

  • 3/4 cup Raw Cashews
  • 3/4 cup Water

For the Bisque

  • 3 Lobster Tails (About 6 oz Each)
  • 4 cups Seafood Stock
  • 3 tbsp Dairy Free Butter
  • 2 Shallots, Minced
  • 1 small Carrot, Diced
  • 1 stalk Celery, Diced
  • 3 cloves Garlic, Minced
  • 2 tbsp Tomato Paste
  • 1/4 cup Dry Sherry
  • 3 tbsp All Purpose Flour
  • 1 tsp Smoked Paprika
  • 1/4 tsp Cayenne Pepper
  • 1/2 tsp Dried Thyme
  • 1 tsp Salt
  • 1 tsp Fresh Lemon Juice
  • 1 tbsp Fresh Chives, Chopped

How to Make It

Step 1

Cover the cashews with boiling water and let them soak for 20 minutes.

Step 2

Bring the seafood stock to a boil in a medium pot. Add the lobster tails and cook for 5 to 6 minutes until the shells are bright red and the meat is just opaque. Remove the tails and let them cool.

Step 3

Pull the meat from the shells, chop it into bite sized pieces and refrigerate. Return the shells to the stock and simmer for 15 minutes to build flavor, then strain and discard the shells.

Step 4

Melt the butter in a large pot over medium heat. Add the shallots, carrot and celery and cook for 5 minutes, then stir in the garlic and tomato paste for 2 minutes.

Step 5

Pour in the sherry and let it bubble for 1 minute. Sprinkle in the flour and stir for 1 minute, then slowly whisk in the lobster stock. Add the smoked paprika, cayenne and thyme and simmer for 10 minutes.

Step 6

Drain the cashews and blend them with the water until silky. Add the soup to the blender in batches with the cashew cream and blend until velvety smooth.

Step 7

Return the bisque to the pot over low heat. Stir in most of the lobster meat, the salt and lemon juice and warm for 2 minutes.

Step 8

Ladle into bowls and top with the remaining lobster meat and chives.

Recipe Tips

Blend the Cashews Until Completely Smooth

I recommend using a high-speed blender to make sure the cashew cream turns completely smooth with no grit. If you rub a drop between your fingers and feel any tiny grains, keep blending for another full minute.

You will get the best results if you make sure the soaking water is boiling hot. This softens the nuts all the way to the center so they blend into a velvety cream that replaces heavy cream perfectly.

Do Not Overcook the Lobster Meat

Lobster meat gets rubbery very fast if it stays in boiling water for too long. Take the tails out of the pot the moment the meat turns white and loses its clear, raw look.

Keep in mind that you will warm the meat in the hot soup again right before serving. Pulling it out early during the first step keeps every bite tender and soft.

Crack the Shells Before Simmering

My favorite trick here is to use clean kitchen scissors to cut the empty lobster shells into smaller pieces before returning them to the stock.

Breaking the shells exposes the inner surfaces and releases the flavorful juices trapped inside. This gives you a much richer seafood base without needing any extra ingredients.

Popular Questions

What can I substitute for the dry sherry?

You can replace the sherry with an equal splash of dry white wine or extra seafood stock mixed with a teaspoon of apple cider vinegar.

The vinegar gives you that bright, slightly sweet tang that the sherry normally brings to the pot.
