Dairy Free Loaded Potato Skins

Loaded potato skins have always been one of my favorite appetizers to make for casual get-togethers. They are crispy on the outside and packed with classic savory toppings.

If you cannot eat dairy, finding good comfort food like this can sometimes feel difficult. Most classic versions are completely covered in standard cheese and sour cream.

Golden dairy free loaded potato skins

That is why I love this version of dairy free loaded potato skins. You get all the rich flavor you expect, but without any stomach aches or milk ingredients.

The skins get brushed with a quick seasoned oil and baked twice so they turn out crisp and golden.

Add your favorite toppings at the end, and you have a warm snack that everyone at the table can enjoy.

Why This Recipe Is a Keeper

Super Crispy Texture – Baking the skins twice makes them delightfully crispy and crunchy on both the outside and inside.

Classic Pub Flavor – You get the exact same rich comfort food taste as restaurant appetizers without touching any real dairy.

Warm Smoked Seasoning – Brushing garlic and smoked paprika directly onto the potato adds bold, savory flavor to every bite.

Gooey Melted Cheese – High heat melts the dairy free cheddar beautifully over crisp bacon for that perfect gooey bite.

Here’s What You’ll Need

  • 6 Medium Russet Potatoes
  • 2 tbsp Olive Oil, Divided
  • 2 tbsp Dairy Free Butter, Melted
  • 1 tsp Salt
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1 1/2 cups Dairy Free Shredded Cheddar
  • 8 Slices Bacon, Cooked & Crumbled
  • 1/2 cup Dairy Free Sour Cream
  • 3 Green Onions, Thinly Sliced
  • 1 tbsp Fresh Chives, Chopped

How to Make It

Step 1

Preheat the oven to 400°F. Scrub the potatoes, prick them with a fork, and rub them with 1 tablespoon of the olive oil. Bake for 50-60 minutes until tender, then let them cool for 15 minutes.

Step 2

Slice each potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch inside the skin. Save the scooped potato for another use, and increase the oven temperature to 450°F.

Step 3

Stir together the melted butter, remaining olive oil, salt, garlic powder, and smoked paprika. Brush the mixture over the potato skins inside and out.

Place them skin side up on a baking sheet and bake for 8 minutes, then flip and bake for another 8 minutes until crisp and golden.

Step 4

Fill each skin with dairy free cheddar and crumbled bacon. Return to the oven for 4-5 minutes, until the cheese is fully melted.

Step 5

Top with a dollop of dairy free sour cream, green onions, and chives. Serve hot.

Recipe Tips

Leave Enough Potato Flesh Inside

When you scoop out the cooked potato centers, be careful not to scrape too close to the skin. You want to leave a solid border of about one-quarter of an inch all the way around.

From my experience, if you scoop out too much potato, the skins become flimsy and collapse under the weight of the toppings.

Leaving a little bit of fluffy potato behind also gives you the perfect contrast with the crispy skin.

Help the Dairy Free Cheese Melt Smoothly

Dairy-free cheese does not melt as quickly as regular cheese, and it can dry out if it stays in the heat too long.

Savory loaded potato skins without dairy

My favorite trick here is to tent a piece of foil loosely over the baking sheet for the first two minutes of the cheese melt.

This traps the steam and helps the shreds turn soft and gooey without getting hard or crusty.

Use a Wire Rack for Extra Crispiness

You’ll get the best results if you set an oven-safe wire cooling rack directly on top of your baking sheet.

Placing the potato skins on the rack lets the hot oven air circulate underneath them while they bake.

This keeps the bottoms from sitting in pooled oil, so both sides turn out super crisp instead of soggy.

Popular Questions

How do I get dairy free cheese to melt properly without drying out?

Dairy free cheese often needs a little trapped steam to melt smoothly compared to dairy cheese. You can tent a piece of foil loosely over the baking sheet for the first 3 minutes of melting to lock in heat and moisture.

A light mist of olive oil spray directly over the shredded cheese before it goes in the oven also speeds up the melting process.
