A classic carbonara is one of my favorite pasta dishes to make when I want something comforting and quick.
Most traditional recipes rely heavily on grated cheese to get that rich flavor and thick sauce.

Because of that, I wanted to create a dairy free crispy pancetta carbonara that gives you that same savory comfort without using any dairy.
You get all the salty crunch from the meat and a silky sauce that coats every strand of pasta just right.
If you miss eating this classic meal or simply avoid cheese, this bowl will make you feel right at home.
Why This Recipe Is a Keeper
Authentic Creamy Texture – The silky egg and pasta water emulsion creates a rich, glossy sauce without a single drop of dairy.
Savory Cheesy Flavor – Nutritional yeast and white miso paste team up to deliver that deep, salty taste of real aged parmesan.

Irresistible Crispy Crunch – Golden pancetta bits add an incredible bite that balances the velvety smooth spaghetti in every forkful.
Fast Weeknight Dinner – You can bring this whole restaurant-quality pasta meal to your table in under thirty minutes.
Here’s What You’ll Need
- 1 lb Spaghetti
- 6 oz Pancetta, Diced
- 1 tbsp Olive Oil
- 4 large Egg Yolks
- 2 large Eggs
- 1/3 cup Nutritional Yeast
- 1 tbsp White Miso Paste
- 1 1/2 tsp Freshly Cracked Black Pepper, Plus More For Serving
- 1 cup Reserved Pasta Water
How to Make It
Step 1
In a medium bowl, whisk together the egg yolks, eggs, nutritional yeast, miso and black pepper until completely smooth with no lumps of miso.
Step 2
Heat the olive oil in a large skillet over medium heat. Add the pancetta and cook for 8 to 10 minutes, stirring occasionally, until crispy and the fat has rendered. Turn off the heat and leave the pancetta and fat in the pan.
Step 3
Cook the spaghetti in a large pot of salted boiling water until al dente. Reserve 1 cup of the pasta water, then drain.
Step 4
Slowly whisk 1/4 cup of the hot pasta water into the egg mixture to gently warm it and keep it from scrambling later.
Step 5
Add the hot spaghetti to the skillet with the pancetta and toss to coat in the fat. Let it sit for about 1 minute so the pan is hot but no longer sizzling.
Step 6
Pour the egg mixture over the pasta and toss constantly for 1 to 2 minutes, adding pasta water a splash at a time, until it turns into a silky, creamy sauce.
If the sauce looks too thin, set the pan over the lowest heat for a few seconds while tossing nonstop until it thickens slightly.
Step 7
Serve right away, topped with any crispy pancetta bits from the pan and extra black pepper.

Recipe Tips
Dissolve the Miso Paste First
White miso paste is fairly thick and stubborn. If you drop it into the bowl with all the eggs and nutritional yeast at once, you will get small salty clumps that are tricky to smooth out.
I recommend mashing the miso against the bottom of your bowl with just one egg yolk first using a fork or a small whisk.
Once that forms a completely smooth base, whisk in the remaining eggs, yolks, and nutritional yeast for a lump-free sauce.
Let the Skillet Cool Down
A heavy skillet holds onto heat even after you switch off the burner. If that pan is still sizzling when you pour in the egg mixture, you will end up with scrambled eggs instead of a sauce.

I always wait until the pan goes completely quiet after tossing the pasta in the rendered fat.
You want only the gentle heat from the cooked noodles to thicken the sauce, not direct heat from the hot metal.
Let the Nutritional Yeast Hydrate
Nutritional yeast provides that savory, cheesy flavor without dairy, but dry flakes can sometimes leave a powdery texture if they do not dissolve properly.
My favorite trick is to mix the egg and yeast blend together a few minutes before the pasta finishes boiling.
Giving the yeast a few minutes to soak in the raw eggs softens the flakes and guarantees your sauce turns out velvety smooth.
