Dairy Free Cheesy Hashbrown Casserole

A warm potato casserole is one of my favorite dishes to serve on lazy weekend mornings.

Traditional versions are usually loaded with heavy cream and regular cheese, which can be tough on your stomach if you cannot eat dairy.

Easy dairy free cheesy hashbrown casserole

That is why I created this dairy free cheesy hashbrown casserole that keeps all the rich flavor without using any real milk products.

It has a soft, creamy center and a crunchy cereal topping that adds the best texture in every single bite.

You can bake it for a holiday brunch or just keep leftovers in the fridge for an easy breakfast during the week.

Why This Recipe Is a Keeper

Crispy Topping – Crushed cornflakes mixed with melted butter create an irresistible, crunchy contrast to the soft potatoes beneath.

Rich Homemade Sauce – A simple roux made with oat milk and sour cream gives you an unbelievably rich, velvety texture.

Here’s What You’ll Need

For the Casserole

  • 30 oz Frozen Shredded Hash Browns, Thawed
  • 4 tbsp Dairy Free Butter
  • 1 Small Yellow Onion, Finely Diced
  • 3 tbsp All Purpose Flour
  • 1 cup Chicken Broth
  • 1 cup Unsweetened Oat Milk
  • 1 cup Dairy Free Sour Cream
  • 2 cups Dairy Free Shredded Cheddar, Divided
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

For the Topping

  • 2 cups Cornflakes, Lightly Crushed
  • 3 tbsp Dairy Free Butter, Melted

How to Make It

Step 1

Preheat the oven to 350°F and grease a 9×13 inch baking dish. Spread the thawed hash browns on a clean kitchen towel, roll it up, and squeeze out as much moisture as you can so the casserole bakes up creamy instead of watery.

Step 2

Melt the butter in a medium saucepan over medium heat. Add the onion and cook for 4-5 minutes, until soft and translucent, then whisk in the flour and cook for 1 minute.

Step 3

Slowly whisk in the chicken broth, followed by the oat milk, and simmer for 3-4 minutes until thick and smooth.

Remove the pan from the heat and stir in the sour cream, garlic powder, smoked paprika, salt, and pepper.

Step 4

In a large bowl, toss the hash browns with the creamy sauce and 1 1/2 cups of the cheddar until evenly coated. Spread the mixture into the prepared dish and sprinkle the remaining cheese on top.

Step 5

Toss the crushed cornflakes with the melted butter and scatter them evenly over the casserole.

Step 6

Bake for 50-55 minutes, until bubbling around the edges and golden on top. Let it rest for 10 minutes before serving so it sets and slices neatly.

Recipe Tips

Squeeze the Potatoes Completely Dry

From my experience, skipping a proper squeeze is the number one reason this casserole turns out watery.

After thawing your hash browns, wrap them tightly in a clean kitchen towel and wring it out firmly over the sink.

You will be surprised by how much liquid comes out, and removing it ensures your sauce stays thick and rich instead of runny.

Pick the Right Type of Oat Milk

You’ll get the best results if you double-check that your oat milk is completely unsweetened and unflavored.

Even cartons labeled plain can sometimes contain added sugars or subtle vanilla flavors that will ruin the taste of your savory sauce.

I recommend checking the nutrition label on the back to make sure there are zero grams of added sugar.

Cool the Sauce Before Adding Sour Cream

Dairy-free sour cream is delicate and does not handle direct, boiling heat very well.

If you stir it straight into a bubbling pot, the sauce can break and end up with a grainy texture.

I always pull the saucepan completely off the hot burner and let it rest for one minute before whisking the sour cream in.

Popular Questions

Can I assemble this casserole the day before baking?

Yes, you can mix the filling and spread it into your baking dish up to 24 hours in advance. Just cover the dish tightly and keep it chilled in the refrigerator.

Wait to add the buttered cornflake topping until right before you put it in the oven so the cereal stays perfectly crisp.
