Jalapeno poppers are one of my favorite appetizers, but turning those flavors into a full dinner is even better.
That is why I love making this dairy free jalapeno popper pasta on busy weeknights.

Eating dairy free often means missing out on rich and creamy sauces, but this dish solves that problem completely.
You get crispy bacon, tender pasta, and just enough heat from fresh peppers to keep things interesting.
It comes together quickly on the stove and gives you all that classic comfort food flavor without any real dairy.
Why This Recipe Is a Keeper
Classic Appetizer Flavor – You get all the bold flavor of classic jalapeno poppers tossed right into a big, satisfying pasta bowl.
Super Creamy Sauce – The mix of dairy free cream cheese and cheddar melts into an ultra smooth, velvety cheese sauce.

Irresistible Crunchy Topping – Golden toasted panko and crisp bacon add the best contrasting crunch to every single creamy bite.
Perfect Mild Heat – Sautéed fresh peppers add a bright pop of flavor without being overwhelmingly hot for the family.

How to Make It
Step 1
Cook the bacon in a large skillet over medium heat for 8 to 10 minutes until crispy. Transfer to a paper towel and pour off all but 2 tablespoons of the fat.
Step 2
Spoon 1 tablespoon of the bacon fat into a small skillet, add the panko and toast over medium heat for 2 to 3 minutes until golden. Set aside.
Step 3
Cook the rotini in a large pot of salted boiling water until al dente. Reserve 1/2 cup of the pasta water, then drain.
Step 4
Add the diced jalapenos to the remaining bacon fat in the large skillet and cook over medium heat for 3 minutes. Add the garlic and cook for 1 more minute.
Step 5
Lower the heat and add the dairy free cream cheese, oat milk, smoked paprika, onion powder and salt, whisking until smooth. Stir in the cheddar shreds a handful at a time until melted and creamy.
Step 6
Add the pasta, half the bacon and a splash of the pasta water and toss until everything is coated in the sauce.
Step 7
Serve topped with the remaining bacon, toasted panko and sliced jalapeno.

Recipe Tips
Soften the Cream Cheese First
Set your dairy-free cream cheese on the counter for about 20 minutes before making the sauce.
From my experience, cold dairy-free cream cheese tends to separate and stay lumpy when it hits a warm pan.
Letting it come up to room temperature helps it whisk smoothly into the oat milk so your sauce stays completely silky.
Check Your Oat Milk Label
Make sure your carton of oat milk says unsweetened and plain on the front.

Many brands label their cartons as original, but they still sneak in extra sugar or a splash of vanilla flavoring.
Even a tiny hint of sweetness will alter the taste of your savory bacon and garlic sauce.
Melt the Cheddar Over Low Heat
Turn your stove burner down to low before you add the dairy-free cheddar shreds.
Plant-based cheeses break down and turn oily if they get too hot, which will make your cheese sauce look separated.
I recommend stirring in a small handful at a time, letting each batch melt away into the sauce before adding the next one.

Popular Questions
Can I use a different plant milk instead of oat milk?
Unsweetened almond milk or soy milk will work well, but make sure to choose an unflavored carton so the pasta does not taste sweet.
Oat milk is ideal because it is naturally thick and creamy, so a thinner milk might need an extra minute of simmering to thicken up properly.
