German chocolate cake has always been one of my favorite desserts. The mix of rich chocolate, crunchy pecans, and sweet coconut is hard to beat.
I wanted to turn those same classic flavors into a cold treat, so I created this dairy free german chocolate cake ice cream.

Eating dairy free can sometimes feel limiting, especially when you want a rich and creamy scoop of ice cream. This dessert gives you all the comfort of the original bakery treat without any actual dairy.
The dark chocolate base churns up smooth, and the coconut and pecan swirl brings the perfect texture to every bite.
It is simple to prepare in your kitchen, and you do not need any fancy cooking skills to get it right.
Why This Recipe Is a Keeper
Classic Cake Flavor – You get the authentic taste of rich German chocolate cake transformed into a refreshing frozen treat.
Incredible Creaminess – Full-fat coconut milk creates a luscious, velvety texture that rivals traditional dairy-based ice cream.

Double Chocolate Goodness – Cocoa powder and melted semi-sweet chocolate combine to give you a deeply satisfying, rich chocolate flavor.
Decadent Homemade Swirl – The gooey coconut-pecan ribbons add a delightfully sweet caramel taste throughout the entire scoop.
Here’s What You’ll Need
For the Chocolate Base
- 2 cans (13.5 oz each) Full-Fat Coconut Milk
- 1/2 cup Granulated Sugar
- 1/3 cup Unsweetened Cocoa Powder
- 2 tbsp Light Corn Syrup
- 1/4 tsp Salt
- 4 oz Dairy Free Semi-Sweet Chocolate, Finely Chopped
- 2 tsp Vanilla Extract
For the Coconut Pecan Swirl
- 3/4 cup Pecans
- 3/4 cup Full-Fat Coconut Milk
- 2/3 cup Packed Light Brown Sugar
- 2 Large Egg Yolks
- 1 pinch Salt
- 3 tbsp Dairy Free Butter
- 1 cup Sweetened Shredded Coconut
- 1/2 tsp Vanilla Extract
How to Make It
Step 1
Toast the pecans in a dry skillet over medium heat for 4 to 5 minutes, stirring often, until fragrant. Let cool, then roughly chop and set aside.
Step 2
In a medium saucepan, whisk together the coconut milk, brown sugar, egg yolks, and salt, then add the butter. Cook over medium-low heat, stirring constantly, for 8 to 10 minutes, until the mixture thickens enough to coat the back of a spoon and turns a light caramel color.
Remove from the heat and stir in the shredded coconut, toasted pecans, and vanilla. Let cool, then cover and refrigerate until cold.
Step 3
In a clean saucepan, whisk together the sugar, cocoa powder, and salt, then slowly whisk in the coconut milk and corn syrup until smooth. Cook over medium heat, whisking often, for 5 to 6 minutes, until steaming and just starting to bubble around the edges.
Step 4
Remove from the heat and whisk in the chopped chocolate and vanilla until melted and glossy. Pour into a bowl, press plastic wrap onto the surface, and refrigerate for at least 6 hours or overnight.
Step 5
Whisk the chilled base well, then pour it into an ice cream maker bowl that has been frozen for at least 24 hours. Churn for 20 to 25 minutes, until thick and creamy like soft serve.
Step 6
Spread one third of the chocolate ice cream into a 9×5-inch loaf pan and dot with spoonfuls of the coconut pecan swirl. Repeat the layers two more times, then gently swirl with a skewer.
Step 7
Cover tightly and freeze for 4 to 6 hours, until firm. Let sit at room temperature for 10 minutes before scooping.

Recipe Tips
Use Canned Full-Fat Coconut Milk
You will get the best results if you use canned full-fat coconut milk instead of the carton drink from the dairy aisle. Carton milk has too much water, which turns your ice cream icy and hard once frozen.
When you open the can, the thick cream usually separates from the liquid. I recommend whisking the can contents thoroughly in a small bowl before measuring so the fat is distributed evenly.
Cook the Swirl over Low Heat
The coconut pecan swirl contains egg yolks, which can scramble quickly if the pan gets too hot. I’ve found that keeping your burner on medium-low is the safest way to build a thick, glossy caramel.

Make sure to scrape the bottom and corners of the saucepan constantly with a silicone spatula. If you stop stirring, small bits of cooked egg will form and ruin the smooth texture.
Chill the Pecan Swirl Completely
It is tempting to layer the pecan mixture while it is still slightly warm from the stove. From my experience, even a lukewarm swirl will instantly melt your freshly churned chocolate soft serve.
You will get the best results if you make the swirl first and keep it in the fridge for a few hours. A cold swirl stays thick and creates distinct, clean pockets throughout the pan.

Popular Questions
Can I use coconut milk from a carton instead of canned coconut milk?
You need to use canned full-fat coconut milk for this recipe. Carton coconut milk has too much water and very little fat, which will make your ice cream icy instead of creamy.
The high fat in canned coconut milk acts just like heavy dairy cream, giving you that rich bakery texture.
