Millionaire’s shortbread has always been one of my favorite sweet treats to buy at the bakery. It is classic, rich, and so satisfying.
The combination of a crumbly cookie base, sweet caramel, and melted chocolate on top is hard to beat.

Most versions you find in shops are packed with regular butter and milk, which does not work if you have dairy sensitivities.
This dairy free millionaire’s shortbread gives you all those classic layers without using any regular dairy products.
It is simple to make in your kitchen, and nobody will notice any difference in the final taste.
Why This Recipe Is a Keeper
Classic Taste Without Dairy – You get the same rich, buttery flavor of traditional bakery shortbread without needing any real dairy at all.
Incredible Three-Layer Texture – Every single bite delivers a wonderful contrast of crumbly biscuit, gooey caramel, and firm chocolate.

Foolproof Coconut Caramel – Condensed coconut milk creates a thick, golden caramel sauce in just eight minutes on the stove.
Clean and Easy Slicing – A tiny touch of coconut oil keeps the top chocolate layer smooth so it cuts without cracking.
Here’s What You’ll Need
For the Shortbread
- 3/4 cup Dairy Free Butter, Softened
- 1/3 cup Granulated Sugar
- 1 3/4 cups All Purpose Flour
- 1/4 tsp Salt
For the Caramel
- 1/2 cup Dairy Free Butter
- 1/2 cup Packed Light Brown Sugar
- 2 tbsp Light Corn Syrup
- 1 can (11.25 oz) Sweetened Condensed Coconut Milk
- 1/2 tsp Salt
- 1 tsp Pure Vanilla Extract
For the Chocolate Layer
- 8 oz Dairy Free Dark Chocolate, Chopped
- 1 tsp Coconut Oil
- 1/2 tsp Flaky Sea Salt
How to Make It
Step 1
Preheat the oven to 350°F and line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides.
Step 2
Beat the butter and sugar for 2 minutes until creamy. Add the flour and salt and mix on low until a soft, crumbly dough forms, then press it into an even layer in the pan and prick all over with a fork.
Step 3
Bake for 22-26 minutes until golden brown at the edges and lightly golden in the center. Let it cool while you make the caramel.
Step 4
In a medium saucepan over medium-low heat, melt the butter, brown sugar and corn syrup together, stirring until the sugar dissolves. Stir in the condensed coconut milk and salt.
Bring to a gentle boil and cook, stirring constantly, for 6-8 minutes until the caramel is thick, deep golden and pulls away from the bottom of the pan. Remove from the heat and stir in the vanilla.
Step 5
Pour the caramel over the shortbread and spread it into an even layer. Refrigerate for 1 hour until firm.
Step 6
Melt the chocolate with the coconut oil in the microwave in 20-second bursts, stirring until smooth. Pour it over the caramel, spread evenly and sprinkle with flaky sea salt.
Step 7
Chill for 30 minutes until the chocolate is set. Lift the slab out using the parchment, let it sit at room temperature for 10 minutes so the chocolate doesn’t crack, and cut into 16 squares.

Recipe Tips
Choose the Right Dairy-Free Butter
From my experience, solid baking sticks work much better here than dairy-free butter from a tub.
Tub butter contains extra water that can turn your shortbread greasy and soft instead of crisp.
Press the Shortbread Base Firmly
You’ll get the best results if you use the flat bottom of a metal measuring cup to press the dough down.

Packing the crumbs tightly creates a sturdy base that will not crumble under the weight of the caramel.
Be sure to poke holes all over the dough with a fork so trapped steam does not create bumps while it bakes.
Watch the Caramel Heat Closely
Sweetened condensed coconut milk has natural sugars that burn much faster than regular dairy milk.
I recommend keeping your stove on medium-low and using a flat silicone spatula to stir constantly.
Make sure you scrape along the bottom edges of the pot so none of the mixture sticks and browns too early.

Popular Questions
Will the caramel layer taste strongly like coconut?
You might notice a very light hint of coconut on its own, but the brown sugar and vanilla do a great job of softening that flavor.
Once you eat the caramel together with the buttery shortbread and dark chocolate, the coconut taste is hardly noticeable at all.
