Whenever fresh asparagus is in season, I always look for simple ways to turn it into a warm lunch or dinner.
A classic creamy soup is usually my first choice, but traditional versions are loaded with heavy cream that does not always sit well with everyone.

That is why I love making this dairy free cream of asparagus soup at home.
It stays completely dairy free by using a simple potato and a splash of oat milk to get that rich texture naturally.
A squeeze of lemon at the end keeps the flavor bright and fresh without needing any real cream at all.
Why This Recipe Is a Keeper
Rich and Creamy – The blended potato and oat milk create a silky texture without a single drop of dairy cream.
Bright and Fresh – Fresh lemon juice and zest cut through the rich base to bring out lively spring flavors.

Gorgeous Presentation – Blending the fresh stalks creates a vibrant green bowl that looks like it came from a restaurant.
Wonderful Texture Contrast – Crisp sautéed asparagus tips on top add a fun bite that makes every spoonful exciting.
Here’s What You’ll Need
- 2 lb Asparagus, Woody Ends Trimmed
- 3 tbsp Dairy Free Butter, Divided
- 1 medium Yellow Onion, Diced
- 3 cloves Garlic, Minced
- 1 medium Yukon Gold Potato, Peeled & Diced
- 4 cups Vegetable Broth
- 3/4 cup Unsweetened Oat Milk
- 1 tsp Lemon Zest
- 1 tbsp Fresh Lemon Juice
- 1 1/2 tsp Salt
- 1/2 tsp Black Pepper
- 1 tbsp Fresh Chives, Chopped
How to Make It
Step 1
Cut the top 1 1/2 inches off the asparagus to reserve the tips, then chop the remaining stalks into 1 inch pieces. Melt 1 tbsp of butter in a large pot over medium heat and saute the tips for 3 minutes until bright green and crisp tender. Set aside.
Step 2
Melt the remaining butter in the same pot. Add the onion and cook for 5 minutes until soft, then stir in the garlic for 1 minute.
Step 3
Add the asparagus stalks, potato and broth. Bring to a boil, then simmer for 15 minutes until everything is very tender.
Step 4
Blend the soup with an immersion blender until completely smooth and bright green.
Step 5
Stir in the oat milk, lemon zest, lemon juice, salt and pepper and warm through for 2 to 3 minutes.
Step 6
Serve topped with the sauteed asparagus tips and chives.

Recipe Tips
Choose Plain and Unsweetened Oat Milk
From my experience, you want to double-check that your oat milk carton says both unsweetened and unflavored. Many regular oat milks have subtle vanilla or added sugars that will ruin a savory soup.
I recommend using an extra-creamy or barista-style oat milk if you can find it. This gives the soup the rich body of heavy cream without any dairy.
Snap the Asparagus to Remove Tough Ends
Instead of guessing where to cut the woody bottoms, hold both ends of one stalk and bend it gently until it snaps. It will naturally break right where the fibrous part ends and the tender part begins.

You’ll get the best results if you use that first snapped stalk as a measuring guide to trim the rest of your bunch with a knife. This keeps you from throwing away good asparagus while saving your soup from stringy bits.
Stick with Yukon Gold Potatoes
I love using Yukon Gold potatoes here because their natural starches create an amazing, velvety texture once blended. They act as the main thickening agent so you do not need flour or heavy cream.
From my experience, russet potatoes can make the soup feel a bit grainy, while red potatoes do not break down quite enough. Stick to the yellow gold variety for that silky, glossy finish.
