If you grew up eating classic icebox cakes at family gatherings, you probably remember this one. It was always a favorite of mine because of the creamy layers and chocolate glaze.
Traditional versions use regular milk and heavy cream, which can be tough on your stomach if you cannot tolerate dairy. I wanted to create a version that gives you the same comfort without any issues.

This dairy free chocolate eclair cake tastes just as rich and creamy as the original. You make a quick homemade vanilla pudding, layer it with graham crackers, and top it with smooth chocolate.
The best part is that you do not even need to turn on the oven. The crackers soften in the fridge overnight and turn into soft, cake-like layers.
It is the perfect easy treat to make ahead when you want something sweet and simple to share.
Why This Recipe Is a Keeper
No Baking Needed – You can skip the hot oven completely and make a fancy treat using simple refrigerator magic.
Real Pastry Cream Flavor – Homemade vanilla pudding made with oat milk gives it that classic, rich bakery taste without any dairy.

Surprising Cake Texture – Crisp graham crackers magically soften into tender pastry layers as the dish chills in your fridge overnight.
Rich Ganache Topping – Warm coconut milk melts into the chocolate chips to create an ultra smooth, glossy top layer.
Here’s What You’ll Need
For the Vanilla Filling
- 3/4 cup Granulated Sugar
- 1/3 cup Cornstarch
- 1/4 tsp Salt
- 3 cups Unsweetened Oat Milk
- 4 Large Egg Yolks
- 2 tbsp Dairy Free Butter
- 2 tsp Vanilla Extract
- 2 cups Dairy Free Whipped Topping, Thawed
For Assembly
- 1 box (14.4 oz) Dairy Free Graham Crackers
For the Chocolate Topping
- 1 1/2 cups Dairy Free Chocolate Chips
- 1 tbsp Dairy Free Butter
- 3/4 cup Full Fat Canned Coconut Milk
How to Make It
Step 1
In a medium saucepan, whisk together the sugar, cornstarch, and salt. Gradually whisk in the oat milk until smooth, then whisk in the egg yolks.
Step 2
Cook over medium heat, whisking constantly, for 6 to 8 minutes, until the mixture thickens and begins to bubble. Keep whisking for 1 more minute, then remove from the heat and whisk in the butter and vanilla.
Step 3
Transfer the pudding to a bowl, press plastic wrap directly onto the surface, and refrigerate for about 2 hours, until completely cold.
Step 4
Whisk the cold pudding briefly to loosen it, then gently fold in the whipped topping in two additions until smooth and fluffy.
Step 5
Line the bottom of a 9×13-inch dish with a single layer of graham crackers, breaking them as needed to fit. Spread half of the filling over the crackers, add a second layer of crackers, spread the remaining filling, and finish with a final layer of crackers.
Step 6
Heat the coconut milk until steaming and pour it over the chocolate chips and butter in a bowl. Let it sit for 5 minutes, stir until glossy and smooth, then cool for 10 minutes and spread it evenly over the top layer of crackers.
Step 7
Cover and refrigerate for at least 8 hours or overnight, until the graham crackers soften into tender, cake-like layers. Slice and serve cold.

Recipe Tips
Strain the Pudding for a Smooth Texture
From my experience, cornstarch and egg yolks can easily form tiny clumps on the bottom of the pot while heating up.
You’ll get the best results if you pour the hot cooked pudding through a fine-mesh strainer into your bowl before chilling it.
This extra step removes any stray bits of cooked egg and keeps your filling completely silky and smooth.
Use Canned Coconut Milk and Stir It Well
I recommend using full-fat canned coconut milk rather than the thin coconut milk sold in a carton.

The thick cream and the coconut water naturally separate inside the can while sitting on the shelf.
Give the contents of the can a thorough stir before measuring it out so your chocolate topping gets the rich fat it needs to set up properly.
Press the Plastic Wrap Directly on the Pudding
When you put the warm pudding into the fridge to chill, do not just cover the top of the bowl.
My favorite trick here is to gently press the plastic wrap right against the surface of the pudding so no air touches it.
This stops a tough, rubbery skin from forming on top, which would leave unpleasant lumps in your final filling.

Popular Questions
Can I use almond milk instead of oat milk for the pudding?
You can use almond milk, but make sure to choose an unsweetened and unflavored variety so the taste remains balanced.
Keep in mind that almond milk is naturally thinner than oat milk, so your pudding layer might turn out slightly less rich and creamy.
