Stracciatella has always been one of my favorite gelato flavors.
When I stopped eating dairy, I really missed that combination of sweet vanilla cream and crisp chocolate flakes.

Most store-bought options just do not get the texture right, so I decided to make my own dairy free stracciatella gelato at home.
You do not need any heavy cream or eggs to make this work. A blend of plant milks gives it that rich, slow melting texture you expect from real gelato.
It is completely dairy free, so you can enjoy a cold treat after dinner without an upset stomach.
Why This Recipe Is a Keeper
Authentic Gelato Texture – The cornstarch and corn syrup create an ultra smooth scoop that never turns icy or chalky.
Melts in Your Mouth – Coconut oil helps the dark chocolate ribbons snap gently and melt effortlessly on your tongue.

Perfect Milk Balance – Blending rich coconut milk with oat milk gives you pure creaminess without any overpowering coconut flavor.
No Eggs Required – This simple cooked base skips raw yolks entirely, making it super easy and stress-free for beginner cooks.
Here’s What You’ll Need
For the Gelato Base
- 1 can (13.5 oz) Full-Fat Coconut Milk
- 1 1/2 cups Unsweetened Oat Milk, Divided
- 2/3 cup Granulated Sugar
- 2 tbsp Light Corn Syrup
- 3 tbsp Cornstarch
- 1/4 tsp Salt
- 1 1/2 tsp Vanilla Extract
For the Chocolate Drizzle
- 4 oz Dairy Free Dark Chocolate, Chopped
- 1 tbsp Refined Coconut Oil
How to Make It
Step 1
In a small bowl, whisk the cornstarch with 1/2 cup of the oat milk until completely smooth and set aside. In a medium saucepan, combine the coconut milk, remaining oat milk, sugar, corn syrup, and salt, and heat over medium, stirring, until steaming and the sugar dissolves.
Step 2
Whisk the cornstarch mixture again, then pour it into the saucepan while whisking constantly. Keep cooking and whisking for 2 to 3 minutes, until the base thickens to the consistency of heavy cream and coats the back of a spoon.
Step 3
Remove from the heat and stir in the vanilla. Pour through a fine mesh sieve into a bowl, press plastic wrap onto the surface, and refrigerate for at least 6 hours or overnight.
Step 4
Melt the chocolate and coconut oil in the microwave in 20-second bursts, stirring between each, until smooth. Let it cool until barely warm but still pourable.
Step 5
Pour the chilled base into an ice cream maker bowl that has been frozen for at least 24 hours and churn for 20 to 25 minutes, until thick and creamy. During the last minute of churning, slowly drizzle the chocolate in a thin stream directly onto the moving gelato so it sets into delicate chocolate flecks.
Step 6
Transfer to a freezer container, cover, and freeze for 2 to 3 hours for soft, creamy gelato, or longer for a firmer scoop. If frozen overnight, let sit for 10 minutes before serving.

Recipe Tips
Stick With Refined Coconut Oil
In the chocolate drizzle, I strongly suggest using refined coconut oil instead of virgin coconut oil.
Refined oil has no coconut flavor, so you only taste rich dark chocolate. It also creates a crisp texture that melts smoothly in your mouth without any waxy feel.
Cool the Chocolate Before Drizzling
From my experience, the temperature of your melted chocolate decides the final texture of your gelato flecks.

If the chocolate is warm, it will melt the churned base and blend in, turning your whole batch into plain chocolate ice cream.
Let the melted mixture sit on the counter until it feels completely neutral to the touch before you pour it into the machine.
Keep the Corn Syrup in the Base
Dairy-free gelato can easily freeze solid because it does not have natural butterfat.
I recommend keeping the light corn syrup because it prevents hard ice crystals from forming. It keeps your scoops soft and silky even after several days in the freezer.

Popular Questions
Can I make this gelato without an ice cream machine?
Yes, you can pour the chilled base into a shallow container and freeze it, stirring thoroughly every 30 minutes for about 3 hours.
Once it reaches a thick soft-serve texture, quickly fold in the melted chocolate mixture using a spatula to create thin flakes before the final freeze.
