Ingredients

For The Cider Donut Crumble
  • 3/4 cup All-Purpose Flour
  • 1/3 cup Light Brown Sugar
  • 1 tsp Ground Cinnamon
  • 1/4 tsp Ground Nutmeg
  • 1/4 tsp Fine Sea Salt
  • 4 tbsp Melted Dairy-Free Butter
  • 2 tbsp Apple Cider
For The Apple Butter Swirl
  • 1/2 cup Dairy-Free Apple Butter
  • 1 tbsp Apple Cider
For The Ice Cream
  • 1 1/2 cups Apple Cider
  • 13.5 oz can Full-Fat Coconut Milk
  • 1 cup Extra Creamy Oat Milk
  • 1/2 cup Cane Sugar
  • 2 tbsp Cornstarch
  • 1 tbsp Refined Coconut Oil
  • 1 tsp Ground Cinnamon
  • 1 tsp Pure Vanilla Extract
  • 1/4 tsp Fine Sea Salt

Instructions

  1. Simmer the 1 1/2 cups apple cider in a saucepan over medium heat until reduced to 1/2 cup, about 15 to 20 minutes. Cool the concentrated cider completely.
  2. Heat the oven to 350 degrees F and line a baking sheet with parchment paper. Mix the flour, brown sugar, cinnamon, nutmeg, sea salt, dairy-free butter, and 2 tablespoons apple cider until chunky crumbs form.
  3. Bake the cider donut crumble for 11 to 13 minutes, stirring once, until crisp and golden. Cool completely, then place it in the freezer.
  4. Whisk the reduced cider, coconut milk, oat milk, cane sugar, cornstarch, coconut oil, cinnamon, vanilla, and sea salt in a saucepan. Cook over medium heat until steaming and lightly thickened, then refrigerate for at least 4 hours.
  5. Stir the apple butter with 1 tablespoon apple cider until smooth. Churn the cold ice cream base according to the ice cream maker's directions, adding two-thirds of the crumble during the final 2 minutes.
  6. Layer the ice cream with the apple butter swirl and remaining cider donut crumble in a freezer-safe container. Freeze for 4 to 6 hours and soften for 5 to 10 minutes before serving.
