Chill the dough for 30 minutes so the cookies bake up thick. Meanwhile, preheat the oven to 350°F and line two baking sheets with parchment paper.
Scoop the dough into balls of about 3 tablespoons each and space them 2 inches apart. Bake for 11 to 13 minutes, until the edges are golden and the centers still look slightly soft.
