Heat the olive oil in a large deep skillet over medium high heat. Brown the ground beef with the onion for 6-7 minutes, breaking the meat into crumbles.
Stir in the garlic and tomato paste and cook for 1 minute.
Pour in the beef broth and add the elbow macaroni, ketchup, yellow mustard, smoked paprika, salt and black pepper. Stir well and bring to a simmer.
Cover and cook for 10-12 minutes, stirring a couple of times, until the pasta is tender and most of the liquid is absorbed.
Turn the heat to low and stir in the almond milk and dairy free cheddar shreds. Cover for 2 minutes, then stir until the sauce is creamy and coats the pasta.
Taste and adjust the salt and pepper.
Top with sliced green onions and chopped dill pickles for that true cheeseburger flavor, and serve straight from the skillet.
