Equipment

  • piping bag
  • melon baller

Ingredients

  • 24 Large Strawberries
  • 1/2 cup Dairy Free Dark Chocolate Chips
  • 1 tsp Coconut Oil
  • 8 oz Dairy Free Cream Cheese, Softened
  • 1/3 cup Powdered Sugar
  • 1 tsp Pure Vanilla Extract
  • 1 tsp Lemon Zest
  • 1 pinch Salt
  • 1/3 cup Dairy Free Graham Cracker Crumbs

Instructions

  1. Rinse the strawberries and pat them completely dry. Slice off the stem end of each berry to create a flat top, and trim a thin slice from the pointed end so it can stand upright.
Use a small spoon or melon baller to hollow out the center of each strawberry from the top, leaving the walls intact.
  2. Melt the chocolate chips with the coconut oil in the microwave in 20-second bursts, stirring until smooth. Dip the bottom 1/2 inch of each strawberry into the chocolate and stand it upright on a parchment-lined tray.
Refrigerate for 10 minutes until the chocolate is set.
  3. Beat the cream cheese, powdered sugar, vanilla, lemon zest and salt for 1-2 minutes until smooth and fluffy. If the filling feels too soft to pipe, chill it for 15 minutes.
  4. Transfer the filling to a piping bag fitted with a star tip. Pipe a generous swirl into each strawberry, mounding it above the top.
  5. Sprinkle the graham cracker crumbs over the filling.
  6. Refrigerate for 30 minutes before serving. These are best enjoyed the same day they are made.
