Place the finely chopped dairy free chocolate in a heatproof bowl.
Heat the coconut milk and coconut oil in a small saucepan until it just begins to simmer, then pour it over the chocolate. Let it sit untouched for 3 minutes, then stir slowly until completely smooth and glossy.Stir in the vanilla and salt.
Cover and chill the ganache for about 2 hours, until firm enough to scoop but not rock hard.
Scoop tablespoon-sized portions and quickly roll them into balls between your palms. If the ganache starts to soften, pop it back in the fridge for a few minutes.
Roll each truffle in cocoa powder until coated and store in the refrigerator. Let them sit at room temperature for 10 minutes before serving for the creamiest texture.
