Ingredients

  • 8 oz Dairy Free Dark Chocolate, finely chopped
  • 1/2 cup Canned Full Fat Coconut Milk
  • 1 tbsp Refined Coconut Oil
  • 1 tsp Vanilla Extract
  • 1/8 tsp Salt
  • 1/3 cup Unsweetened Cocoa Powder, for rolling

Instructions

  1. Place the finely chopped dairy free chocolate in a heatproof bowl.
  2. Heat the coconut milk and coconut oil in a small saucepan until it just begins to simmer, then pour it over the chocolate. Let it sit untouched for 3 minutes, then stir slowly until completely smooth and glossy.
    Stir in the vanilla and salt.
  3. Cover and chill the ganache for about 2 hours, until firm enough to scoop but not rock hard.
  4. Scoop tablespoon-sized portions and quickly roll them into balls between your palms. If the ganache starts to soften, pop it back in the fridge for a few minutes.
  5. Roll each truffle in cocoa powder until coated and store in the refrigerator. Let them sit at room temperature for 10 minutes before serving for the creamiest texture.
