Ingredients

For The Pasta
  • 12 oz Penne Pasta
  • 1 lb Boneless Skinless Chicken Breast, Thinly Sliced
  • 1 tsp Chili Powder
  • 1 tsp Ground Cumin
  • 1/2 tsp Smoked Paprika
  • 1 tsp Kosher Salt, Divided
  • 1/2 tsp Black Pepper
  • 2 tbsp Olive Oil
  • 1 Red Bell Pepper, Thinly Sliced
  • 1 Green Bell Pepper, Thinly Sliced
  • 1 Yellow Onion, Thinly Sliced
  • 3 Garlic Cloves, Minced
  • 1 cup Unsweetened Plain Dairy Free Milk
  • 1/2 cup Dairy Free Cream Cheese-Style Spread
  • 1/2 cup Reserved Pasta Water
  • 1 tbsp Lime Juice
  • 2 tbsp Fresh Cilantro, Chopped

Instructions

  1. Cook the penne in a large pot of salted water until al dente. Reserve 1 cup pasta water, then drain.
  2. Toss the chicken with the chili powder, cumin, smoked paprika, 1/2 teaspoon salt, and black pepper.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook the chicken for 5 to 6 minutes until browned and cooked through, then transfer it to a plate.
  4. Add the remaining olive oil, bell peppers, and onion to the skillet. Cook for 6 to 8 minutes until tender and lightly charred. Add the garlic and cook for 30 seconds.
  5. Reduce the heat to medium. Add the dairy free milk and dairy free cream cheese-style spread, stirring until smooth.
  6. Add the pasta, chicken, remaining salt, and 1/4 cup pasta water. Toss until creamy, adding more pasta water as needed.
  7. Stir in the lime juice, garnish with cilantro, and serve hot.
