Ingredients

For The Soup
  • 4 Tablespoons Dairy Free Butter
  • 2 Tablespoons Olive Oil
  • 3 Pounds Yellow Onions, Thinly Sliced
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Granulated Sugar
  • 3 Garlic Cloves, Minced
  • 1/2 Cup Dry White Wine
  • 6 Cups Beef Broth
  • 1 Teaspoon Fresh Thyme Leaves
  • 1 Tablespoon Dairy Free Worcestershire Sauce
  • 1/2 Teaspoon Black Pepper
For The Topping
  • 6 Slices Dairy Free French Bread
  • 1 Cup Dairy Free Gruyere-Style Shreds

Instructions

  1. Melt the dairy free butter with the olive oil in a large Dutch oven over medium heat. Add the onions, salt, and sugar.
  2. Cook the onions for 35 to 45 minutes, stirring every few minutes, until deeply golden and caramelized. Lower the heat if the onions begin to scorch.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Add the white wine and scrape the bottom of the pot. Simmer for 3 to 4 minutes until the wine is reduced by about half.
  5. Stir in the beef broth, thyme, Worcestershire sauce, and black pepper. Simmer uncovered for 20 minutes, then taste and adjust the seasoning.
  6. Ladle the soup into oven-safe bowls and place them on a baking sheet. Top each bowl with toasted French bread and dairy free Gruyere-style shreds.
  7. Broil for 2 to 3 minutes until the dairy free cheese is melted and lightly browned. Serve carefully after cooling for several minutes.
