1cupFull-Fat Coconut Milk
1/2cupSun-Dried Tomatoes Packed In Oil, Chopped
1/4cupNutritional Yeast

Instructions
Pat the chicken dry and season both sides with salt, pepper, and paprika.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 4 minutes per side until golden, then transfer it to a plate.
Reduce the heat to medium and add the garlic, Italian seasoning, and red pepper. Cook for 30 seconds until fragrant.
Pour in the chicken broth and scrape up the browned bits from the bottom of the skillet. Simmer for 3 minutes.
Stir in the coconut milk, sun-dried tomatoes, nutritional yeast, and salt. Simmer for 4 minutes until the sauce starts to thicken.
Return the chicken and its juices to the skillet. Bake at 375 F for 12 to 15 minutes, until the chicken reaches 165 F.
Spoon the sauce over the chicken and finish with fresh basil. Serve with rice, pasta, or crusty dairy free bread.
