Line a large baking sheet with parchment paper and make sure it fits flat in your freezer. Pat the diced strawberries very dry with paper towels, because extra juice turns into ice crystals and makes the clusters icy instead of creamy.
In a medium bowl, whisk the yogurt, protein powder, maple syrup and vanilla until completely smooth with no powdery lumps. The mixture should be thick like frosting so it clings to the fruit.
Fold the strawberries into the yogurt mixture until every piece is fully coated.
Drop heaping tablespoon mounds onto the baking sheet, about 14 clusters total, and gently push them into compact rounds. Freeze for 2 hours, until completely solid.
Melt the chocolate chips and coconut oil in the microwave in 30-second intervals, stirring between each, until smooth. Let the chocolate cool for 2 to 3 minutes so it is warm but not hot.
Drop one frozen cluster at a time into the chocolate, lift it out with a fork and tap off the excess. Set it back on the parchment and sprinkle with crushed freeze dried strawberries and flaky salt right away. The chocolate sets almost instantly on the frozen yogurt, so keep the remaining clusters in the freezer until you are ready to dip them.
Freeze for 10 more minutes to fully set the shell. Store in an airtight container in the freezer for up to 2 weeks, and let the clusters sit for 3 to 5 minutes before eating for the perfect creamy, crunchy bite.
