Ingredients

For the Brownie Layer
  • 4 oz Dairy Free Dark Chocolate, Chopped
  • 1/3 cup Dairy Free Butter
  • 3/4 cup Granulated Sugar
  • 2 Large Eggs
  • 1 tsp Vanilla Extract
  • 1/2 cup Almond Flour
  • 1/4 cup Dairy Free Chocolate Protein Powder
  • 1/4 cup Unsweetened Cocoa Powder
  • 1/4 tsp Salt
For the Cookie Dough Layer
  • 1/4 cup Cashew Butter
  • 2 tbsp Dairy Free Butter, Softened
  • 3 tbsp Maple Syrup
  • 2 tbsp Coconut Sugar
  • 1 tsp Vanilla Extract
  • 3/4 cup Almond Flour
  • 1/2 cup Dairy Free Vanilla Protein Powder
  • 1 pinch Salt
  • 1-2 tbsp Unsweetened Almond Milk
  • 1/3 cup Dairy Free Mini Chocolate Chips
For the Chocolate Topping
  • 3 oz Dairy Free Dark Chocolate, Chopped
  • 1 tsp Coconut Oil

Instructions

  1. Preheat the oven to 350°F and line an 8x8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. Melt the chocolate and butter together in the microwave in 30-second intervals, stirring until smooth. Whisk in the sugar, then whisk in the eggs one at a time and the vanilla until the batter turns thick and glossy.
  3. Fold in the almond flour, chocolate protein powder, cocoa powder and salt until just combined, then spread the batter evenly into the pan.
  4. Bake for 20 to 24 minutes, until a toothpick inserted in the center comes out with moist crumbs. Cool completely, then chill for 30 minutes so the cookie dough layer spreads cleanly.
  5. For the cookie dough, beat the cashew butter, softened butter, maple syrup, coconut sugar and vanilla until creamy. Add the almond flour, vanilla protein powder and salt and mix into a soft dough, adding almond milk 1 tablespoon at a time only if it feels dry, then fold in the mini chocolate chips.
  6. Drop spoonfuls of the cookie dough over the chilled brownies and press it into an even layer with a spatula or damp fingertips.
  7. Melt the chopped chocolate with the coconut oil until smooth and spread it over the cookie dough. Chill for 30 minutes until set, then cut into 16 squares.
